Ingredients:
- 2 tablespoons coriander seeds
- 2 teaspoons cumin seeds
- 2 teaspoons fennel seeds
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1 teaspoon cinnamon powder
- 1 teaspoon dried mango powder (amchur)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon Kashmiri red chili powder (for color, optional)
- 1 teaspoon dried fenugreek leaves (kasuri methi)
- 4-5 cloves
- 2-3 black cardamom pods
- 1-2 small pieces of dried ginger
Instructions:

Heat a pan on medium heat and dry roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, mustard seeds, cloves, black cardamom pods, and dried ginger until they turn aromatic. Stir continuously to avoid burning.

Remove the roasted spices from the pan and let them cool to room temperature.

Grind the roasted spices along with cinnamon powder, dried mango powder, turmeric powder, red chili powder, Kashmiri red chili powder (if using), dried fenugreek leaves, to a fine powder using a spice grinder or blender.
