Sambar Masala is a spice blend used in South Indian cuisine to make Sambar, a flavorful lentil and vegetable stew. Here's a simple recipe for Sambar Masala:

Ingredients:

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon fenugreek seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon mustard seeds
  • 1 tablespoon turmeric powder
  • 1 tablespoon red chili powder
  • 10-12 dried curry leaves
  • 2 tablespoons chana dal (split Bengal gram)
  • 2 tablespoons urad dal (split black gram)
  • 1 tablespoon asafoetida (hing)
  • 2 tablespoons grated coconut (optional)

Instructions:

  1. Heat a pan on medium heat and dry roast the coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, mustard seeds, chana dal, and urad dal until they turn aromatic and lightly browned. Stir continuously to avoid burning.

  2. Remove the roasted spices from the pan and let them cool to room temperature.

  3. In the same pan, add the curry leaves and roast them for a minute or until they become crispy.
